For the bleeding, the goal was obviously to not just dilute the must, but end up with basically the same amount of liquid in the tank, just that the Brix would be in line with what you wanted. Never heard the term "Jesus units", but I'm open-minded...

The acidification was totally expected, of course, and it pretty common these days in pre-ferment.

I wanna come see! Also looking forward to the next installment!
