The economics of olive oil are negative in Provence. I am taking some 50 olive trees back into production. 'Caillette' is the variety; it makes the 'huile d'olive de NIce' AOC. This year we produced 20 liters. None of it will be sold: it's for family and friends.
On tasting the fruit is low-key hazelnut. The burning persistence should fade out with the summer.</description>
